Ingredients

  • 2 tablespoons of coconut or olive oil
  • 1 small onion, finely chopped
  • 4 cloves of garlic, minced
  • 3 tablespoons of freshly minced ginger
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of garam masala
  • 1 teaspoon of turmeric
  • 1 bay leaf
  • 1 cup of lentils (any variety)
  • 1 (15-ounce) can of pumpkin purée
  • 6 cups of vegetable broth

Method

Step 1

Heat coconut oil in a large pot over medium-high heat. Sauté chopped onion and minced garlic until golden brown, approximately 4 minutes.

Step 2

Stir in freshly minced ginger, ground cumin, ground coriander, garam masala, turmeric, and a bay leaf, ensuring the onions and garlic are evenly coated with the aromatic spices.

Step 3

Add lentils, pumpkin purée, and vegetable broth to the pot.

Step 4

Increase the heat to high and bring the soup to a boil.

Step 5

Reduce the heat to medium and let the soup simmer for 20 minutes.

Step 6

Once cooked, remove the bay leaf and serve hot.
